Wasabee Sushi is a small sushi restaurant in Downtown Bellingham that has found a niche quality to price ratio for their sushi. As sushi becomes more popular there has become a new low in both quality and price defined by grocery stores. However, Wasabee has found a way to allow the downtown lunch crowd to sit down and eat a high quality meal without paying a premium price. The lunch combos, the most popular item on the menu, include a generous salad, the best miso soup in town, and six rolls of makizushi sushi. Though Wasabee also serves nigiri sushi and sashimi sushi, this is the extent of it’s menu.
The restaurant has 15 black lacquer tables and two waitresses at lunch time, sometimes only one. It is best to come right when they open and get your order in early, since the lunch crowd can put the kitchen behind. When full the restaurant can be loud, however it invokes a clam atmosphere with its tan walls and Japanese lanterns and screens. Orders are done from limited menu, and taken to the kitchen to return 15 minutes later on china plates. While you wait for your sushi the staff brings you the miso soup that compliments you order.
The overall theme of Wasabee Sushi is simplicity. From the simple décor to the limited menu, and the nibble and overworked wait staff, the restaurant is running a lean operational which results in low prices to its patrons.
