With locations in Mt. Vernon, Smokey Point, La Conner, Burlington and of course, Bellingham, El Gitano is a family-style Mexican restaurant that has turned the genre into an exact science. My family -- ‘hamsters that we are -- frequents the Bellingham location over at Sunset Square for any number of reasons: a post-soccer game meal, a pre-movie dinner, an informal birthday party, a "Moms’ Night Out" margarita. It’s easy to think of reasons to go there, because the staff at El Gitano makes it easy for you to be there.

The staff at El Gitano is friendly, efficient and even...suave. Yes, I do mean that. They are as smoothly agreeable and courteous as courtiers in Emperor Montezuma’s court. Whether you’re a table of eight that wants separate checks, or your finicky five year old eats nothing but hamburgers, they will smile indulgently, treat you like royalty, and give you the impression that there isn’t any thing else they’d rather do than accommodate you. They move briskly and efficiently, whether it’s to seat their customers (and only on the very busiest of nights have I had to wait for a table) or bring out hot plates of food (which always seems to come quickly, regardless of how hungry and impatient I’m feeling).

When you are led through the clean and well-kept dining area to one of the high-backed booths (and almost all of the many tables in the large dining area are booths), and sit and open your menu, you won’t be surprised. The Arroz con Pollo, burritos, enchiladas and combination platters are all what you’d expect to find at a family-style Mexican restaurant. That being said, there is a generous section on the menu devoted to seafood, and an intriguing array of dishes for vegetarians (including a tofu enchilada). The food, while not out of the ordinary, is consistent, and never disappointing. In addition - and maybe just to show that exact sciences don’t have to be predictable and boring - El Gitano offers karaoke in the lounge two nights a week, and hosts a traditional Mexican Mariachi band on Friday nights.
