Review

I happened to arrive on the 14th floor of the Bellingham Towers building with some friends late one afternoon, after not having been there for at least a couple years. We’d heard there was a bar there, so we went to have some drinks and admire the good view. After looking over the bar menu we became intrigued, and decided to order some appetizers. When the food arrived it was shockingly good, and there was much ohhing and ahhing and passing of plates around the table. My friends and I were amazed. What was this place called Nimbus? Had we somehow been transported to some sort of upscale restaurant in San Francisco or New York? And, if I went for dinner, would it be as good?

A few weeks later I did indeed go back to Nimbus for dinner with my husband. Perusing the dinner menu we were impressed with the variety of dishes offered. They ranged from the exotic (truffled potato gnocchi with wild mushrooms and buerre blanc), to winter comfort food (vegetable pot pie). We finally settled on Seared Duck Breast with a quince and celeriac risotto for me, and Summit Creek Lamb chops with pomegranate couscous and cardamom yogurt sauce for my husband. When our meals arrived, I was struck by how simple and elegant they looked -- everything pleased the eye, and nothing was too dramatic or flashy. The tastes of our meals echoed this theme of artistic balance -- the meat was cooked perfectly, and all the flavors blended beautifully into a complete and complex whole. Our wine -- each of the two glasses recommended by our informal yet professional server -- complemented the meals very well. We ended our meal with a deep and satisfied sigh, and I wondered again about the brilliant palate of our chef.

In actuality there are two chefs at Nimbus. Business partners and culinary conspirators Josh Silverman and James Winberg are both graduates of the Bellingham Technical College School of Culinary Arts. After traveling and honing their skills in high-profile kitchens in both Europe and the U.S., they’ve returned to Bellingham to combine their talents in a project of their own: Nimbus. In the short time that they’ve begun this venture, they’ve demonstrated a maturity of taste and artistic talent that have earned them rave reviews from local and national critics.

I have never written a review for anything before but I feel compelled to do so after my experience at Nimbus last night. This restaurant is extremely overpriced for what you are served. I don't mind paying ridiculous prices for good food, service, ambiance, but only the views were worth it, it was fun looking out over the city and seeing it from a birdseye view. Back to the food....
I ordered a blackened prawn Ceasar Salad..you get better lettuce in one of those plastic bagged salads at the supermarket. The dressing on this very SMALL salad was close to nonexistent, luckily I got 4 croutons! 3 miniature prawns on top. All this for $11.00! My daughter ordered the $15.00 flatbread, (these are appetizers) that was suppose to have cheese, sausage, but these items also were barely apparent. As a downtown business owner I am aware of the cost of rent/leases, and can only assume that their lease payments for such a spectacular view cuts deeply into their food budget.

I really, really want to like Nimbus, but I always leave feeling hungry and robbed! I have no objection spending bucks on a good dinner, but I have never had a 'wow' moment here. The last time I was in we were brought a bread and oil olive plate that had THREE large dying horse flies in the oil! I could have looked past that with another drink, but the waiter never came back and busser didn't think to ask. We called it an early night and went home to leftover pizza.

My husband took me to Nimbus for my birthday last week, and we thought it was fabulous! The view is like nothing else in Bham, and they have a great deal on Sunday nights - 3 courses for $30, or $45 which includes a wine pairing with each course. I had a sweet corn chowder soup, a tempura tofu small plate, and wild coho salmon. My husband had the caesar salad, a cantelope/proscuitto small plate, and the NY strip. We finished with the White chocolate creme brulee with golden raspberries. It was ALL WONDERFUL! And very economical. As to the person who said they left feeling hungry, I disagree. I was pleased to leave feeling full and satisfied but not stuffed. The service was excellent, and we were pleased to know they use locally-sourced foods, and the chefs are locals also. I highly recommend the Nimbus!

Interesting place with a great view and excellent drinks. There's no sense in thinking about prices when you know they are going to be high. Some things were a little off like the paring of foods on some of the plates *flavor confusion*, some deserts were spot on and others they completely dropped the ball *triple chocolate*, the presentation of some of the dishes was nice and really complimented the dish and others looked as if they had been tossed together without much thought. I'm sure all the food was "cooked" very well. I think under the right circumstances this restaurant could be really nice. They just need to maintain the same level of quality throughout all their dishes and redesign the ones that don't fit their fine dining image. To their credit the menu was fresh, interesting and provided some food for your mind not just your appetite. I will eat there again but I'll be a bit more selective.
